Cake Tin de Buyer 3013.20

The de Buyer 3013.20 cake mould is a stainless steel, expandable square frame with sharp corners designed for mousse- and cream-based desserts, sponge cakes and Joconde biscuits. It measures 200 x 200 x 50 mm and combines flexible spring-steel construction with outer graduations for easy size adjustment and precise results. The frame is suitable for use in freezer, deep freezer, blast chiller, refrigerator and oven; it is waterproof on a flat baking support and returns to its original shape after use.

Advantages

Made of spring stainless steel, the mould is flexible yet sturdy to allow easy release of bakes while retaining its original shape. Fixing notches on the outer upper edge lock the frame at the chosen size and produce smooth edges. The stainless steel resists oxidation at low temperatures and the outer graduation helps set accurate dimensions. The mould is dishwasher-safe for convenient cleaning.

Suitable for

• Mousse-based desserts
• Cream-based desserts
• Sponge cakes and layer cakes
• Joconde biscuits and thin sponge layers
• Chilled and frozen entremets (using solid or semi-solid fillings)

How to use

Pour or place the prepared mousse, cream or sponge layers into the frame, then chill or bake according to the recipe. After use, release the frame gently to remove the product; the spring-steel frame will return to its original shape.

Recommendations

Do not use the frame with fully liquid preparations; ensure fillings are semi-solid or supported by a base to prevent leakage. For best results with chilled desserts, work on a flat, stable support and allow sufficient setting time in the freezer or refrigerator. Clean in the dishwasher or by hand with mild detergent and dry thoroughly before storage.
